Oven Temperatures
With fan ovens, general rules cannot apply. Some manufacturers recommend baking for a shorter time and at a lower temperature while others recommend baking at the same temperature and just reduce baking time!
For best results it is very important that you consult the instructions manual for your oven.

Weight Conversion
In this guide we have given quantities in both metric and imperial. Since exact conversion from imperial to metric does not usually give practical working quantities, the metric measures have been rounded to the nearest unit of 25 grams.
The tables below give the recommended equivalents. Remember, though, when using any of the recipes in the book, follow only one set of measure as they are not interchangeable.

Approximate conversion values indicate that when converting from a round tin to a square tin to reduce by 2 cm or 1 inch.
