White Chocolate Brownies

A modern twist on a classic recipe, the milky bar kid would be proud of these!

Ingredients

  • 250g/9oz good quality white chocolate
  • 110g/4oz butter
  • 4 large eggs
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 275g/10 oz Odlums Cream Plain Flour
  • 110g/4 oz Shamrock Pecan Nuts, roughly chopped
  • 350g/12 oz Shamrock Golden Caster Sugar

Method

  1. Preheat the oven to 170ºC/325ºF/Gas 3.
  2. Melt the white chocolate and butter in a bowl over a pan of simmering not boiling water. (Don't allow the base of the bowl to touch the water). Allow to cool slightly.
  3. Whisk the eggs and salt until light and frothy, then whisk in the sugar and vanilla and whisk until thick and light.
  4. Whisk in the chocolate mixture. Fold in the flour and pecans until well blended.
  5. Put into a buttered 25 x 20 cm/10" x 8" tin.
  6. Cook for 40-50 minutes until set but still slightly soft in the centre.
  7. Cool in the tin and cut into small squares.
