Maybe not the best looking of treats, but certainly one of the tastiest.

Method

  1. Put the sugar and vinegar into a thick pan and heat gently, stirring until the sugar has dissolved completely.
  2. Increase the heat and boil for 10-15 minutes until a little of the mixture can be rolled into a soft ball when dropped into cold water or is 115°C/238°F on a sugar thermometer.
  3. Remove from the heat and stir in the vanilla and walnuts. Leave to cool for 2 minutes then beat until creamy.
  4. Drop in small lumps onto a buttered tin.
