St. Patrick's Porter Cake

Paddy's day isnt complete without a slice of porter cake before the parade!

Ingredients

Method

  1. Preheat oven 180°C/350°F/Gas 4.
  2. Line a 20cm/8” round cake tin with greaseproof paper.
  3. Sieve the flour, salt, baking powder and mixed spice into a bowl and add the sugar.
  4. Rub in the butter and add the fruit and mix.
  5. Add the porter to the beaten eggs and add to fruit mixture.
  6. Mix well.
  7. Transfer to the prepared tin. Place on a low shelf position in the oven bake for approximately 2 hours.
