Shortbread

If there is one thing our celtic cousins can be proud of, its their shortbreads. It is a tasty crumbly biscuit!

Ingredients

Method

  1. Sieve the flour, icing sugar and cornflour into a bowl.
  2. Rub in the margarine until mixture resembles fine breadcrumbs.
  3. Press into a greased and lined loose bottomed 23cm/9” cake tin. Lightly mark into 8 wedges.
  4. Bake in a preheated oven at 180°C/350°F/Gas 4 for 20 minutes until golden in colour.
  5. Allow to cool in tin. Recut the wedges and carefully remove from tin.
