Shamrock Fruit Cake

One of our most popular recipes, this simple fruit cake will have you baking in the kitchen time and time again!

Ingredients

  • 250g Odlums Self Raising Flour, sifted
  • 250g Shamrock Golden Caster Sugar
  • 250g butter, softened
  • 4 medium size eggs
  • 2 tbsp orange juice or water
  • 1 tsp ground mixed spice
  • 411g jar luxury mincemeat

Method

  1. Preheat the oven to 190°C/375°F/Gas 5.
  2. Grease and line an 18 x 30cm baking tray.
  3. Place all the ingredients in a large mixing bowl, apart from the mincemeat, and beat with an electric mixer for 2-3 minutes, until light and fluffy.
  4. Fold in the mincemeat. Pour into the tin and level. Bake for 25-30 minutes until golden brown.
