Prune and Orange Muffins

Get past your previous thoughts of prunes and give these tasty muffins a try.

Ingredients

  • 310g Shamrock Stoneless Prunes
  • 370g Odlums Cream Plain Flour
  • 1 tbsp baking powder
  • 300g sugar
  • 80g butter, soft
  • 1½ tbsp salt
  • 2 eggs
  • 150ml buttermilk
  • 15ml vanilla extract
  • 85ml vegetable oil
  • 45g orange zest

Method

  1. Coat the muffin tins with paper liners.
  2. Sift together the flour and baking powder.
  3. Whisk together the sugar, butter and salt until the mixture is smooth and light in colour.
  4. Whisk the egg, buttermilk, vanilla and oil. Add the butter-sugar mixture and beat until mixed.
  5. Add the sifted dry ingredients and mix on low speed until evenly mixed. Fold in the prunes and orange zest.
  6. Pour the batter into the muffin tins three quarters full and bake at 375°F/190°C/Gas 5 for 30 minutes. Cool for a few minutes and enjoy.
