Peanut Butter Cookies

Easy to bake and even easier to eat, this recipe is a great start for kids baking.

Ingredients

  • 200g/7oz Odlums Tritamyl Gluten Free Flour
  • 125g/4oz butter (softened)
  • 75g/3oz light brown sugar
  • 75g/3oz Shamrock Golden Caster Sugar
  • 125g/4oz crunchy peanut butter
  • 1 egg (beaten)
  • ½ tsp wanilla essence
  • 75g/3oz shelled peanuts

Method

  1. Cream butter, sugars and peanut butter until light in texture.
  2. Beat in the egg and vanilla essence.
  3. Sieve in the flour. Add half the peanuts and mix well.
  4. Divide the dough into 14 balls and space them well apart on 2 greased baking sheets. Flatten slightly with a fork and top with remaining peanuts.
  5. Bake in a preheated oven at 180°C/350°F/Gas 4 for 10-12 minutes or until pale golden in colour and slightly soft in the middle.
  6. Leave them to firm for a few minutes and then cool on a wire tray.
