Mincemeat Cake

A giant mince pie it may be, but its also a Christmas Cake substitute

Ingredients

Method

  1. Mix all the ingredients together.
  2. Transfer to a lined 20cm/8" cake tin.
  3. Bake in a preheated oven at 170°C/325°F/Gas 3 for 1¼ hours approx. or until skewer inserted in the centre comes out clean.
  4. As ovens vary, check after 50 minutes.
  5. Cool in tin for 30 minutes, then cool completely on a wire tray
