Mince Pies

The most famous of sweet Christmas pastries is a great post turkey tea time treat!

Ingredients

  • 200g Odlums Plain Flour
  • 110g margarine
  • 25g Shamrock Cornflour
  • 25g icing sugar
  • ½ tsp nutmeg
  • 2 egg yolks
  • 1 tbsp lemon juice
  • 1-2 tbsp water

Method

  1. Sieve the flour, cornflour, icing sugar and nutmeg into a bowl
  2. Cut the margarine into lumps and rub into flour until like breadcrumbs (a food processor will do this in seconds)
  3. Mix together the egg yolks, lemon juice and water and add to dry ingredients
  4. Mix well to make a firm dough
  5. Chill for half an hour then roll out pastry
  6. Cut out twelve circles of pastry 3 inches in diameter and place in greased cups of a bun tray
  7. Put a spoonful of mince meat into each one
  8. Wet pastry edges
  9. Cut 12 smaller circles of pastry (2 ½ inches in diameter) and use to cover, pressing well together
  10. Brush tops with beaten egg and pierce with a fork
  11. Bake for about 25-35 minutes in a hot oven 400 F / 220 C/ gas mark 6
