Lamb Goulash

This Lamb Goulash is quick, full of flavour and a great meal for all the family

Ingredients

  • 2 tbsp Shamrock Dark Muscavado Sugar
  • 900g lamb
  • 2 x 425g tins Roma Chopped Tomatoes
  • 300ml natural yoghurt or sour cream
  • 25g butter
  • 3 tbsp Roma Tomato Puree
  • 3 medium onions, chopped
  • 2 tsp paprika
  • 2 cloves garlic, chopped
  • 1 tsp salt
  • Sprig of fresh rosemary (optional)
Lamb Goulash

Method

  1. Cut the lamb into 2.5cm / 1 inch cubes
  2. Melt the butter in a pan and add the paprika, onions and garlic
  3. Add the lamb and stir over a low heat until the meat has browned
  4. Add the tomatoes, puree, sugar, salt and rosemary and simmer for 2 hours until the meat is tender
  5. Just before serving, cool slightly then stir in the yoghurt or sour cream off the heat and stir well.
  6. Serve with rice, noodles or jacket potatoes and green salad
