Focaccia Bread

A delicious Italian based pizza bread topped with herbs and cheese.

Ingredients

  • 350g/12oz Odlums Strong Flour
  • ½ tsp Salt
  • 2 tsp Easy Blend Yeast
  • 200ml/7fl oz warm water
  • 1½ tbsp Roma Olive Oil
  • 2 large tomatoes (thickly sliced)
  • 1 tsp coarse rock salt
  • 50g/2oz mozzarella cheese (grated)
  • 1 tsp mixed herbs
  • 1 tbsp RomaOlive Oil

Method

  1. Sieve flour and salt into a bowl.
  2. Sprinkle in the easy blend yeast and mix it in.
  3. Pour in warm water and 1½ tbsp of olive oil. Mix to form a soft dough, adding a few more drops of water if necessary.
  4. Turn onto a lightly floured board and knead for about 10 minutes.
  5. When dough feels bouncy and elastic, put it back into the bowl, cover and leave it in a warm place until it has doubled in size.
  6. Turn out onto a floured surface and punch out the air by kneading for 2–3 minutes
  7. Place the dough on a baking sheet and pull into a round shape.
  8. Shake on the salt, mixed herbs and cheese.
  9. Press the tomato slices into the dough.
  10. Now drizzle the olive oil over the surface of the topping.
  11. Cover with a damp cloth and leave for 30 minutes.
  12. Bake in a preheated oven at 190°C/375°F/Gas 5 for about 30 minutes.
