Chocolate Coconut ice sweet make the perfect party piece, serve chilled for maximum effect

Method

  1. Put the sugar, milk and cocoa into a thick saucepan over a low heat until the sugar has dissolved, continuously stirring.
  2. Bring to the boil, stirring and simmer for 10- 15 minutes, until a little of the mixture when dropped into cold water can be rolled into a soft ball or 115°C/240°F on a sugar thermometer
  3. Remove from the heat and beat in the coconut for 2 minutes
  4. Pour the mixture into a buttered tin and leave to set
  5. Cut into squares when cold
