Chocolate Chip Cookies

Rich, chewy, delicious and deserves to be eaten straight away!

Ingredients

  • 125g/4oz dark chocolate (roughly chopped)
  • 125g/4oz white chocolate (roughly chopped)
  • 175g/6oz Shamrock Light Muscavado Sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 150g/5oz Odlums Self Raising Flour
  • 75g/3oz Odlums Porridge Oatflakes
  • 125g/4oz margarine (at room temperature)

Method

  1. Lightly grease two baking trays and preheat oven to 190°C/375°F/Gas 5.
  2. In a bowl, beat the margarine and sugar until mixture is smooth.
  3. Add the vanilla essence and the egg and beat again.
  4. Finally stir in the flour, oatflakes and chopped chocolate. Mixture will be very stiff.
  5. Place teaspoons of mixture on the baking trays, leaving a space between each to allow for spreading.
  6. Bake for about 15–20 minutes until beginning to turn golden brown. Cool for 2 or 3 minutes on the baking tray, then transfer to a wire tray to cool completely.
