Chocolate Brioche Pudding

French brioche is a fine food on its own, but when accompanied with chocolate here, it becomes a delightful treat!

Ingredients

  • 10 slices brioche, cut into triangles or squares
  • 150g/5oz plain chocolate
  • 75g/3oz unsalted butter
  • 110g/4oz Shamrock Dark Muscavado Sugar
  • 500 ml/18 fl oz whipping cream
  • 4 eggs, beaten
  • 2 tbsp golden icing sugar
  • 1 tbsp cocoa powder

Method

  1. Melt the chocolate with the butter, sugar and cream in a microwave or in a bowl over a pan of hot (not boiling) water. Allow to cool slightly.
  2. Beat the eggs into the chocolate mixture, beating well to ensure they are well mixed.
  3. Place the brioche pieces, overlapping in a lightly buttered baking dish.
  4. Pour over the chocolate mixture, pressing down with a spoon to ensure the brioche is well covered. Leave to soak for a few hours or overnight.
  5. Preheat the oven to 180ºC/350ºF/Gas 4 and bake for about 30-35 minutes until puffed and risen.
  6. Cool slightly and then sift over the Golden Icing sugar and cocoa powder.
  7. Serve warm (not hot) with whipped cream or ice cream. Serves 6-8.
