Chilli Con Carne

This is a fairly mild chilli - if you prefer it hotter increase the chillies to two or three. The Molasses sugar and chocolate darken the sauce and add a deep richness to the flavour of the finished dish.

Ingredients

  • 2 tbsp oil
  • 2 onions, chopped
  • 450g/1 lb lean minced beef
  • 1 tsp oregano
  • 1 tsp ground cinnamon
  • 1 tsp Shamrock Dark Muscavado Sugar
  • 1 small green chilli
  • 1 can (400g approx.) Roma Chopped Tomatoes
  • 1 can (450g) red kidney beans
  • 25g/1 oz plain chocolate
  • Salt to taste

Method

  1. Heat the oil in a large heavy based pan and when hot add the onions. Cook over a moderate heat until soft, then increase the heat and add the minced beef, stirring for a few minutes until browned.
  2. Reduce the heat and add the oregano and cinnamon
  3. Cut open the chilli and remove the seeds under running water, then chop finely. Add to the pan with the kidney beans and tomatoes.
  4. Stir in the chocolate and sugar. Season well with salt, cover and simmer gently for 1 hour, stirring from time to time to avoid the mixture sticking to the bottom of the pan.
