Chicken and Mango Towers

An oriental recipe that combines exotic mango the aromatic warmth of ginger, and a hint of the fiery heat of Tabasco with tender chicken breast.

Ingredients

  • 4 chicken breast fillets, skin removed
  • Splash of oil
  • 1 unripe mango
  • 4 tomatoes, skinned
  • 25g/1oz of butter
  • 2 tbsp Shamrock Light Muscavado Sugar
  • 1 tbsp white wine vinegar
  • Splash of dark soy sauce
  • 1 clove of garlic, finely chopped
  • 1 teaspoon fresh root ginger, chopped
  • Splash of tabasco
  • Chopped fresh coriander salt and pepper
Chicken and Mango Towers

Method

  1. Heat a little oil in a frying pan, add the chicken breasts and sauté on both sides until golden. Transfer to a plate and keep warm.
  2. To make the salsa, peel and de-stone the mango and dice the flesh.
  3. Deseed the tomatoes and chop. Add the butter to the frying pan and sauté the mango and tomato until soft.
  4. Add the sugar, white wine vinegar, soy sauce, garlic and ginger and simmer slowly for 5-6 minutes until the mango is tender.
  5. Add tabasco and seasoning to taste and stir in the coriander. Cut each chicken breast in half horizontally. Lay the bottom slices of chicken on four plates.
  6. Spoon a little salsa on top of each and place the chicken on top.
  7. Serve with noodles.
