Brown Soda Bread

A traditional recipe for an Irish favourite.

Ingredients

  • 12g/4oz Cream Flour
  • 25g/1oz Bran
  • 1/4 Teaspoon Salt
  • 1 Teaspoon Baking Powder
  • 275-425ml/ 1/2 - 3/4 pint sour milk
  • 15g/ 1/2 oz Wheatgerm
  • 350g/12oz Extra Coarse Wholemeal Flour

Method

  1. In a bowl, sieve together the salt, cream flour and bread soda.
  2. Add the wholemeal, wheatgerm and bran and mix together. Add enough milk to make a soft dough.
  3. Turn onto a lightly floured board. Knead until the mixture comes together smoothly.
  4. Place dough on a floured baking sheet. Cut a cross over the top.
  5. Bake in a preheated oven at 400°F, 200°C, Gas 6 for 40 - 45 minutes approximately.
  6. When baked, the bread will have a hollow sound if tapped on the base. Cool on a wire tray.
  7. A tea towel wrapped over the bread at this stage will give a softer crust.
