Boiled Fruit Cake

Our recipe of the month winner is a delicious Boiled Fruit Cake. Our competition winner Joanne says it's lovely with butter and a big mug of tea, and after trying we certainly don't doubt her for a second!

Ingredients

  • 4oz Shamrock Mixed Peel
  • 5 level tbsp margarine
  • 6oz light brown sugar
  • 4oz Shamrock Sultanas
  • 1 tsp mixed spice
  • ½ tsp ground ginger
  • ½ pint of water
  • 1lb Odlums Cream Plain Flour (sifted)
  • 2 tsp vinegar
  • 1 tsp Shamrock Bicarbonate of Soda

Method

  1. Grease and line a 9"inch cake tin.
  2. Place peel, margarine, sugar, sultanas, spices and water in a saucepan.
  3. Bring to the boil and simmer for 5 minutes.
  4. Remove from heat and leave to cool
  5. Stir in flour and vinegar
  6. Dissolve soda in 1 tsp of hot water and add to flour and vinegar,
  7. Mix well and pour into the cake tin.
  8. Bake at 180°C for 1 ½ hours.
