Bishops Bread

A delicious dessert bread that is packed full of fruits.

Ingredients

Method

  1. Beat egg yolks with the sugar and flour until smooth
  2. Mix in remaining ingredients except egg whites
  3. In a separate bowl, beat egg whites until they stand in stiff peaks then fold into the fruit batter mixture
  4. Place mixture in a well greased mould or loaf tin of 2 pint / 1.2 litre capacity
  5. Bake in over pre-heated to 350°F/180°C/Gas 4, for 45–55 minutes or until cooked through.
  6. Allow to cool in tin for 5–10 minutes before turning out and cooling on wire rack
