Angee's Zucchini Muffins

Angee blew us away with this strange but delicious recipe! You may not have tried this before, and that’s the beauty of it.

Ingredients

  • Dry
  • 3 cups Odlums Self Raising Flour
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp powder ginger
  • dash clove
  • 1 cup Shamrock Chopped Walnuts
  • ½ cup Shamrock Dessicated Coconut
  • dash salt
  • Wet
  • 1 zucchini shredded (about 2-3 cups)
  • 2 eggs
  • ½ cup Shamrock Light Muscavado Sugar
  • ¾ cup sugar
  • ¾ cups oil
  • zest of one orange and lemon

Method

  1. Pre-heat the oven to 180°C/350°F/Gas 4.
  2. Mix the dry ingredients in one bowl and mix the wet ingredients in another.
  3. Mix the wet ingredients into the dry. Fill muffins and bake for 30 minutes in the pre-heated oven. Simple as that!
